Why didn't the Eagles simply carry Frodo and the One Ring into Mordor and drop the Ring in Mount Doom?

It's stated that the Eagles cannot carry people for long periods and are hindered by this speed and maneuverability-wise.

Coupled with the risk of Nazgul attack makes it a bad idea. The reason the eagles were able to overcome them at the end of Return of the King was because the Ring was already destroyed, causing the Nazgul to because confused and disoriented, and the eagles were not hindered with the protection of the ring bearer e.g. the enemy would just have to concentrate their firepower on the eagle carrying Frodo to win.
